@chefitalianochannel: ⬇️ How to make Spinach & Ricotta Golden Crowns. 📕 Recipe: For the dough: • 200g (7 oz) 00 flour • 175g (6.17 oz) egg yolks • 1 tsp salt For the stuffing: • 150g (5.3 oz) ricotta • 75g (2.6 oz) Parmesan cheese, grated • 100g fresh spinach • 1/2 small onion, diced • 1 tbsp butter • Nutmeg to taste • Salt and black pepper to taste Instructions: 1. While the dough is resting, sauté the onion and spinach in butter until soft, then chop finely and allow to cool. 2. Mix the cooked spinach and onion with the remaining ingredients. 3. Roll out the golden pasta dough to 1 mm (0.04 in) thick and cut into 10x16 cm (3.93x6.29 in) rectangles. 4. Add the filling in the center and fold the rectangle, covering the filling. 5. Press firmly to seal the edges and trim the excess pasta. Fold and join the two ends together and trim the excess pasta again. 6. Cook in boiling salted water and serve with your favorite pasta sauce. 🔔 Secret tip: Choosing eggs with a darker orange yolk and letting the dough rest overnight in the fridge will result in a more intense color.
