Take a small amount of almond paste (7 g) and shape it into a small stick. Repeat until all the almond paste is used up. In a mixing bowl, cream together the softened butter, powdered sugar, and lemon zest until smooth. Add the egg and mix well. Add the flour and baking powder, and mix/knead until a cookie dough forms. Take a small amount of cookie dough (16 g) and form it into a ball. Repeat. Place the cookie dough on the palm of your hand and flatten it. Place a small stick of almond paste on top and pinch the edges of the dough together to encase the almond paste. Roll into a nice stick shape (8 cm long). Brush each cookie with the egg yolk and top with slivered almonds. Place the almond cookies on a baking sheet lined with parchment paper. Bake the almond cookies in a preheated oven at 190 ℃ for 12-15 minutes, or until golden brown. Optional: Top the almond cookies with powdered sugar.
