Remove from the pan and set aside. 💕Lower the heat and deglaze the pan with the vinegar, scraping up any golden bits. Add the onion and cook for 3-4 minutes until softened, then add the garlic and cook for 30 seconds until fragrant. 💕Return the chicken to the pan and season with the oregano, mixed herbs, salt and pepper. Crumble in the stock cube, then pour in the cream, hot water, cream cheese and parmesan. Stir until smooth.  💕Add the lasagne sheets, pressing them down so they’re mostly submerged. Bring to a gentle simmer, cover and cook for 8-10 minutes, stirring once or twice, until the pasta is tender and the sauce has thickened. 💕Stir through the spinach and let it wilt for 1–2 minutes. Scatter over the mozzarella, cover again and cook for 3-4 minutes until melted. Finish briefly under the grill if you want extra colour.
