Salmon Poke Bowls! Welcome back to episode 6 of nourish in 30. A series where I’m sharing nourishing recipes ready in 30 minutes or less. Today we’re making one of my favourite meals to make when I don’t want to turn on my oven and I want something fresh, high in protein, (we’re talking 40 grams per bowl) and ready in under 20 minutes. Let’s do it! SALMON POKE BOWLS Bowls: -300 grams sushi grade salmon -1 cup rice, cooked according to package and cooled -1 cup edamame beans -1 mango, sliced -1/2 avocado, sliced -1/2 cup cucumber, sliced -3 scallions, sliced -sesame seeds -sriracha Sauce: -1 tbsp minced ginger -1 garlic clove, minced -2 tbsp soy sauce -2 tbsp sesame oil -1 tbsp rice vinegar -1 tbsp honey HOW TO: Cut the salmon into small cubes and place in a bowl. Mix the sauce ingredients together in a small bowl or cup and pour onto the salmon along with 1/2 of the sliced scallions. Add some rice to your bowls and add the salmon, edamame, cucumber, avocado, mango, remaining scallions and sesame seeds. Top with sriracha, spicy mayo, or make a double batch of the poke sauce to pour onto the bowls. #salmon #salmonpoke #pokebowl #30minutemeals
