cozy sticky sweet short ribs that are fall-off-the-bone tender. truly the only way to make and serve them. when it gets chilly, the first thing i always want are braised short ribs @beefitswhatsfordinner #BeefYourWay #BeefFarmersandRanchers here's the FULL recipe: Short Ribs: 5 bone-in short ribs Kosher salt + Freshly ground pepper Sauce: 1/2 cup low-sodium soy sauce 6 garlic cloves, grated or minced 1 inch ginger-minced 2 tablespoons rice wine vinegar 1 tablespoon brown sugar 1 tablespoon tomato paste 1 teaspoon gochujang 1 teaspoon ground cumin 2 tablespoons all-purpose flour 2 cups beef stock Sesame seeds, as garnish Green onion, sliced, as garnish 1. Preheat the oven to 350F. 2. In a large Dutch oven, set over medium-high heat. Sear off the short ribs in batches, until browned on each side. Remove from the pot and set aside. 3. While the short ribs are searing, make the sauce. In a large measuring cup, add in the soy sauce, along with the grated garlic, ginger, rice wine vinegar, brown sugar, tomato paste, gochuchanggochujang and cumin. Whisk until smooth. If it’s a little lumpy, it’s ok, it’ll dissolve in the oven. 4. After you remove the short ribs from the Dutch oven, there will be a bit off beef fat in the pot. That’s good! Add in the all-purpose flour and whisk until smooth. Pour in the soy sauce mixture and beef stock. Add the reserved short ribs back to the pot, cover with a lid and transfer to the oven to braise for 2 1/2 hours, until they fall off the bone. 5. Serve over rice. Garnish with sesame seeds and sliced green onion.
