Tiramisu Cheesecake ☕️🍰 Crust: 18-20 (300g) graham crushed graham crackers 1 tsp (2g) espresso 1 tbsp (14g) cocoa powder 5 tbsp (75g) butter *mix and press into cake pan. Bake at 350 for 7-8 min before adding cheesecake filling. Cheesecake Filling: 24 oz cream cheese 8oz mascarpone  1 1/2 (300g) cups sugar 1/2 tsp (3g) salt 1 1/2 tsp (4g) vanilla  1 tsp (2g) espresso powder (in water) 4 eggs 1/2 cup (120g) heavy cream 3/4 cup (170g) Greek yogurt 1 tbsp (8g) corn starch Use ingredients at room temperature. Cream together cream cheese and mascarpone. Add in sugar, salt, vanilla, espresso and mix well. Add in 4 eggs and mix. Add cream, yogurt and corn starch, mix well.  Add half the mixture to the crust (that’s been baked) and then layer the espresso-soaked lady fingers. I use 12 and make sure to dip quickly, don’t let them soak in the espresso too long. Layer the other half of the cream cheese mixture and then bake at 320 for about 80-90 minutes. This will vary depending on how big of a cake pan you used. NOTE: springform pan is best.  Once it slightly jiggles in the middle it is done. Take out and let cool to room temperature then pop it in the fridge until fully chilled (I put mine in overnight).  Coffee Mascarpone Cream 4oz mascarpone 2 tbsp (12g) sugar 1 tsp (2g) instant espresso in water  1 cup (250g) heavy cream Combine mascarpone with sugar and coffee. Mix well.
