Molletes Refried beans 1 can refried beans 3 tbs lard 1 tbs fresh garlic, minced Adobo Onion powder Cumin 3 Bolillos Butter, for toasting Pico de gallo 2 roma tomatoes, deseeded and diced 1/4 onion, diced 1/4 bunch cilantro, chopped 1/2 jalepeno, deseeded and diced Juice of half a lime 1/2 tsp salt Optional toppings Oaxaca or mozzarella cheese, shredded Avocado, sliced Sour cream Crema mexicana Melt lard in a saucepan over medium low heat. Add minced garlic and sauté until garlic is soft but not brown. Add can of refried beans. Season with adobo, onion powder, and cumin. Allow to simmer on low, covered while prepping the other ingredients. Mix in a splash of water if it begins to dry out. Mix ingredients for pico de gallo. Cut bolillos in half horizontally. Toast the cut side on a well buttered griddle. Flip. While the back side toasts, use a spoon to create a moat for the refried beans to go. Top with refried beans and cheese. Place in the oven at 400 degrees for 5 minutes. Top with pico de gallo, avocado, and sour cream or crema mexicana, if using. #britishfood #beansontoast #mexicanfood #molletes #Recipe
