My son loves dosa and can eat for dinner at least few nights a week. I made a big batch of batter this time. I used some and rest of batter divided in few parts and froze it to use after few weeks. Just keep it in fridge overnight or on counter for few hours and it works just fine. I’ve done this so many times. 𝐒𝐚𝐦𝐛𝐡𝐚𝐫- Instant pot version Ingredients: - chopped onion half cup - Half cup chopped tomatoes - 3 green chilies chopped - Curry leaves - One cup toor daal - rinsed and soaked for 10 min - oil - Mustard seeds - Methi seeds - Hing/ asafetida - Salt - Spices ( turmeric, red chilli powder, coriander/cumin powder and 2 tablespoon of sambhar powder, I use @mtr_foods ) - Lemon juice 1 tablespoon - 3 cups water - Chopped cilantro for garnish Recipe: - Rinse and soak daal for 10 min - Start instant pot on sauté mode - Add oil - Add mustard seed and let it crackle - Add green chilies and curry leaves - Add hing - Add Methi seeds - Let it cook for 30 seconds - Add chopped onion, let it cook for 2 min - Add chopped tomatoes and salt - Let it cook until tomatoes are soften (for about 3/4 min) - Add all spices (turmeric, red chilli powder, coriander/cumin powder and 2 tablespoon of sambhar powder, I use @mtrfoodsusacanada ) - Add lemon juice, 1 tablespoon - Mix and let it cook for 30 seconds - Now add three cups water snd soaked lentils - Mix it, close instant pot lid and pressure cook at high for 4 min, let pressure release naturally for about 10 min. - open instant pot and whisk - Add chopped cilantro and enjoy ❤️ you can easily make this in regular pressure cooker if you don’t have an instant pot. Cool until 3 whistle and let pressure release naturally I also made mint coconut chutney: cilantro, mint, green chilli, garlic, ginger, frozen coconut, salt, lemon juice and water 𝐏𝐞𝐚𝐧𝐮𝐭 𝐜𝐡𝐮𝐭𝐧𝐞𝐲 - I never make Idli dosa or uttapam without this chutney. It’s one of our favorite. Ingredients: - 1 cup unsalted roasted skinned peanuts - 4/5 Kashmiri chillies - Salt - Lemon juice - Garlic - Oil - 1 cup Water For tadka/tempering - oil - Mustard seeds - Urad daal - Curry leaves Process: - blend all ingredients for chutney into a smooth paste ( add more water if you need to get smooth consistency) - Do tadka and chutney is ready Dosa masala: oil, mustard, curry leaves, Methi seeds, green chillies, cashews, thinly sliced onion, boiled chopped potato, turmeric, salt, lemon juice and cilantro #dosa #indianfood #FoodTok #southindian #southindianfood #desitiktok #browntiktok #indiantiktok #momover30 #brunch
