@antonycookes: If I ever see John Dory at the fishmonger, I struggle to not buy it. It’s a beautiful fish. Baked here with tomatoes, garlic, lemon and olive oil, and in a sauce inspired by a bouillabaisse. Continuing the theme of Provence, the potato gratin was layered with green tapenade and infused with olive oil.
