Refreshing Cucumber Mint Lemonade also known as Cucumber Agua Fresca is the summer drink of 2023 No nutritional value because it’s a clear juice, but it does pack a punch health wise (more info at the bottom) Prep: <15 min Cook Time: 5 min Chill Time: > 1 h Yields: about 1800 ml (7½ cups) (can be divided) Ingredients: Mint Simple Syrup •100 g (½ cup) sugar. I do not like it overly sweet, but if you do, add more. Sub with 120 ml gave syrup or honey •240 ml (1 cup) water •3 sprigs fresh mint •Small slice of fresh ginger (optional) Lemonade •1-1½ large cucumber, (about 450 g/1 pound) chopped •600 ml (2½ cups) water. Add sparkling water for a mocktail-vibe •Ice cubes Garnish options: cucumber slices Method: -First make the syrup by bringing all the ingredients to a boil over medium heat while stirring to dissolve the sugar. Remove from heat, cover and let it steep until cooled. Then remove mint & ginger and store it in an airtight glass container in the fridge up to 2 weeks -For the cucumber juice place the cucumber in a blender and blend until it’s pureed. Strain the purée through a fine mesh sieve or a cheesecloth into a container. You should get at least 360 ml (1½ cup) of cucumber juice. Store it in an airtight container in the fridge up to 5 days. Discard the cucumber pulp or use it to make tzatziki -For 900 ml lemonade: mix 180 ml (¾ cup) cucumber juice, 120 ml (½ cup) mint simple syrup and 600 ml (2½ cups) water to a pitcher and stir to combine. Taste and adjust to your liking. Chill the cucumber lemonade in the fridge for at least 1 h before serving, up to 5 days. Serve the lemonade chilled over ice (in the glasses) and garnish to your liking Tip: to booze it up, add 120 ml (½ cup) of for instance rum, gin or vodka to 900 ml (3¾ cup) cucumber lemonade Tip 2: to make it a “real” lemonade ad 60 ml of fresh lemon juice to 900 ml (3¾ cup) cucumber lemonade HEALTH BENEFITS OF THIS CUCUMBER LEMONADE Cucumbers consists out of 96% water.
