One of my favorite Filipino comfort foods. Arroz Caldo makes me feel like a kid again, it reminds me so much of my childhood! Here’s exactly how my mom makes it, but there truly are no measurements. You’ve gotta go with your heart 🤤 ARROZ CALDO WITH GINGER GARLIC CHICKEN • 1.5c un-rinsed white rice • 6-8 chicken wings • 3 tbs olive oil  • garlic • fresh ginger • shallot & onion  • salt & pepper • chives or green onion for garnish (limes optional) • fill a large pot halfway with water. Add 1.5 c white rice. The proportions will look way off. If it looks like this, you’re off to a great start. Heat pot with rice & water on high • while rice is coming to a boil, cook down chicken wings, garlic, shallot, onion, and ginger in a pan with olive oil on med-high heat. Goal is to cook down the chicken enough to draw out the chicken fat, which will cook down with the EVOO garlic ginger and shallot. Your wings will not be cooked all the way thru.  • at this point your house smells amazing. • when your water is boiling & you’ve gotten a great infusion of fats in your chicken pan, pour the entire contents of the chicken pan into the large pot of boiling rice water. • when contents are combined, everything will still be extremely watery. Add a ton of salt & pepper, and stir the pot every 5-8 minutes on medium-ish heat. Cover once in awhile.  • do this for 45 min - 1 hr. You’ll notice your soup start to thicken. You can continue thickening to your likeness. Be sure to keep adding salt & pepper and tasting periodically. • [optional step] once your soup is thick enough & seasoned well, pull out all the ginger chunks & chicken wings, remove meat and skin from bones & throw the bones away. Return skin & tender chicken to the Caldo. • serve immediately or refrigerate overnight. It is INSANELY GOOD. Like a hug. • garnish with chives or green onion • **my mom adds lots of pepper, and that’s how I like it to. It really brings a good spice to the caldo. If you’re cooking for kids, might want to be gentle on the pepper. But as you can see, Kai did not mind. At all 🤣 #arrozcaldo #momvlog #soupseason #fallrecipes
