Lamb Rack Pistachio Herb Crusted 🔪 The knife used in this video is the Tokyo Knife Set by @Paudin_Benelux This lamb rack is all about flavour and texture. First I scored the fat cap into a diamond pattern and seasoned it with salt. Then I seared it hard on the plancha on the Kamado so the outside closed up nicely and developed a deep crust. After the sear I took the lamb off the heat, brushed it generously with Dijon mustard, and rolled it through a pistachio herb crumble so it formed a thick, crunchy coating. Then it went back on the Kamado for indirect cooking until perfectly juicy. Sliced it up… and it disappeared within minutes. Simple fire cooking. Big flavour.
