Vadouvan Mac n cheese.  Vadouvan is the result of French people going “wow South Asian food is BUSSIN” and doing their own take on curry powder. It’s normally a dried product which you can buy and it is more mild than it’s south Asian counterparts. But if you want to buy it follow along by blending a couple tablespoons with the onion and garlic. Doing it this way and making the fresh paste is probably easier than finding vadouvan at the store. This is for US entry only sadly :(  Vadouvan paste:  4 shallots 5 cloves garlic 2 tsp thyme 1 tsp ground fenugreek 1 tbsp  ground cumin 1/4 tsp ground clove 1/4 tsp grated nutmeg 1/2 tsp ground cardamom  1 tsp turmeric  2 tsp ground coriander seed  1 tsp chili flakes  Add all ingredients to blender and blend smooth, if it’s not spinning add a touch of oil.  Mac cheese: Paste from above 1/4 cup +1 tbsp all purpose flour 5 tbsp unsalted butter  3 cups milk 1 cup heavy cream 4oz gruyere 4 oz Parmesan  1lb box macaroni elbows  Also feel free to use something like a cheddar, it will be good either way.  Bring a pot of water to a boil and season generously with salt. Cook your macaroni elbows until Al dente, save a cup or so of the pasta water to make any adjustments later. It has salt and starch, perfect to loosen up Mac that’s been sitting for a minute. Strain the rest of the water and put the Mac back in the pot.  Preheat a pot over medium heat and melt your butter, add the paste and sauté for 3-4 minutes until super fragrant. Add the flour and cook for an additional 2 minutes. Whisk in your milk and cream and bring this to a simmer for 4-5 minutes to ensure the flour is cooked. Add in the cheese a little at a time to ensure it melts evenly with no lumps.  Once your mornay is smooth and sexy taste it now and adjust your salt. Pour over your pasta and mix #macandcheese #holidayrecipes #food
