The head steward, François Vatel, created this luxurious cream to serve at grand feasts held at the Château. And now we use it to fill pastries, as filling in cakes, to ice your cupcakes or serve with fresh fruit. 1 cup COLD heavy cream 8oz Mascarpone cheese 1/4 cup + 1 tbsp powdered sugar 1 tbsp vanilla bean paste this recipe makes enough to fill a three layer 8” cake.
