@flavorsbyfrangipane: One-Bowl Lemon Blueberry Loaf 🍋🫐 Spring is in the air, which means I’m shifting my focus to spring bakes. This lemon blueberry loaf reminds me so much of warmer weather. It’s sweet but not too sweet and incredibly moist, thanks to the added sour cream or Greek yogurt. It’s perfect on its own or paired with a cup of coffee ☕️ Recipe 1 cup white sugar 1 Zest from lemon 1/2 cup neutral oil 1 tsp vanilla 2 tbsp lemon juice 1/2 cup sour cream 2 eggs 2 tsp baking powder 1 tsp salt 1 1/2 cups all purpose flour 2 cups blueberries, fresh or frozen 2 tsp sugar for topping 1. Preheat the oven to 350º and line a loaf pan with parchment paper. 2. In a bowl, combine sugar, oil, and vanilla. Whisk together until well mixed. 3. Add eggs to the mixture and whisk until smooth. 4. Incorporate sour cream and lemon juice & zest, mixing well. 5. Add baking powder, salt, and flour, and mix until there are no dry streaks of flour. 6. Gently fold in 1 cup of berries using a rubber spatula. 7. Pour the batter into the loaf pan and top it with the remaining cup of blueberries, gently pressing them in. Sprinkle sugar on top. 8. Bake for 70-80 minutes or until a toothpick comes out clean.
