No shrimp because I’m ballin on a budget  Ingredients:  1 lb chicken thigh 1/2 lb smoked pork sausage  1 c jasmine rice (rinsed) 1 3/4 c chicken stock 2 tbsp tomato paste 1/2 cup crushed tomatoes  1 yellow onion 1 red bell pepper 8 cloves garlic 2 ribs celery 1 bay leaf 5 sprigs thyme 3 tbsp smoked paprika+more for chicken 1 tbsp cayenne pepper + more for chicken 2 tsp garlic powder 2 tsp onion powder Salt Black pepper Green onions and parsley to go on top  Directions: Cut up your chicken thighs and season with 1 tbsp smoked paprika, 2 tsp cayenne, 2 tsp garlic powder, 2 tsp onion powder, 1 tsp black pepper, and a hefty pinch of salt. Let this sit in the seasonings for at least 30 minutes.  Preheat a large pot over medium heat and add in the sausage, render out as much of that fat as you can. Once it’s browned all over pull it out and cook off the chicken in the same pan. Pull it out and add your onions and bell peppers, sauté for 3 minutes and add your celery and garlic. Sauté another 2 minutes and add your tomato paste, smoked paprika, cayenne, thyme, and bay leaf. Cook it until the tomato paste is nearly dried up and brick red. Add your crushed tomato’s, rinsed rice, and chicken stock. Bring to a boil, drop to a simmer and cover. After 8 minutes add your meats back in with all the juices, mix and make sure your pan isn’t scorching on the bottom and recover. After another 8 minutes kill the heat and keep it covered to steam.
