Grilled potato with a Smokey pepper hollandaise Ingredients: 1 lb fingerling potatoes 1 bell pepper- but honestly you can buy a jar of roasted red peppers- piquillo peppers in oil would be good. 3 egg yolks 1 tsp smoked paprika 1 tsp cayenne Juice from 1/2 a lemon or 2 tbsp 12 tbsp or 1 stick+4 tbsp butter Salt to taste If you’re going to put a lil salad on top I just picked out peppery things like arugula, baby mustard and so on. Directions: For the potatoes drop them in a pot and cover with cold water and bring it to a boil. Cook them until they’re just tender, you can check by poking them with a fork. Takes around 15-20 minutes I’d say. Pull them out and lay them out to cool and dry. If you’re using a fresh red pepper char it on all sides and put it in a bag, or in a covered bowl to steam. It’ll soften it up considerably more and make peeling very easy. Melt your butter in a small pot and have it hot and ready to go. You don’t want it to brown so once you see it’s foaming and bubbling just pull it away from the heat. In a blender add the egg yolks, cayenne, lemon, paprika, a pinch of salt, and the now peeled pepper. Or the pre roasted pepper if you’re using the jarred variety. Slowly stream in the hot melted butter until all of it is fully incorporated and the hollandaise is thicc. Taste, adjust with salt or more lemon juice if you want. Keep this warm Cut the fingerling potatoes in half lengthwise so you have a nice big surface area to get some color on. Lightly dress them with oil and season with salt. Bring them over to the grill and have at it. Alternatively you can roast these in the oven at 425°f Drop the potatoes in a bowl and cover with the hollandaise.
