Foolproof Overnight Pellet Smoker Brisket I haven’t done an overnight brisket in YEARS, and I’m not sure why. But I most definitely will now because it makes cooking a brisket so damn convenient. 😂🔥 Having a 40 lb pellet hopper definitely helps too. I threw this Prime brisket on, let the smoker do its thing overnight, and this thing was literally DRIPPING with moisture when I sliced into it. 💦🥩 One thing I’ll critique myself on is I didn’t trim the fat cap down enough, so it didn’t render quite as much as I would’ve preferred. Easy fix for the next one though. 🤙🏽 So if you want a pretty foolproof way to get a juicy, tender, BIG BARKIN’ , check out how I did it below. And shoutout to the homie @406bbq3 for the tips! 💪🏽🔥 Instructions: 1. Trim (a lot of videos online) 15-16lbs before the trim. 2. At 8pm, Miso as a binder then seasoned w/ @Al Frugoni TX.SP then let it rest in the fridge. 3. At 9:30pm I added 2-20lb bags of pellets from @Bearmountain BBQ their Tailgating BBQ & Oak pellets then fired up the @Yoder Smokers YS1500S to 180F 4. At 10pm I put the brisket on and went to bed 💤🛌 5. Had my alarm set to 3am so I can hop on the smokers app and bump the temp to 225F and went back to sleep without ever leaving the bed. 6. At 7am the brisket was temping around 175F so I took it off, foil boated it then back onto the smoker set to 250F. 7. At around 10am it was temping around 200F internal. Removed it and transferred to an aluminum tray, covered with foil then into my warmer set at 145F while still hot. Or rest it in an insulated cooler with a towel over it. Rest for at least 2hrs or you can rest it until you’re ready to cut it up and eat. Let me know if you’re gonna give this recipe a shot in the comments 👇🏽 Toolbox: @NewAgeProductsinc Instant Read Thermometer: @ThermoWorks Thermapen Nano #briskettutorial #brisket #pelletsmoker #brisketrecipe
