Steak frites is easily one of my favorite meals to make. The combination of a juicy steak and crispy truffle parmesan fries is hard to beat!! 😋👨🏾‍🍳🥩🥔  FULL RECIPE ⬇️ Ingredients: Russet potatoes Steak cut of choice  Parmesan cheese Unsalted butter Fresh parsley Fresh rosemary Fresh thyme Garlic cloves Olive oil Vegetable oil Truffle oil Salt Black pepper Truffle Parmesan Fries: Wash the russet potatoes thoroughly to remove any dirt or residue, then pat them completely dry. Cut the potatoes into evenly sized fries to ensure they cook uniformly. Place the potatoes in a bowl of ice water and soak for 10–15 minutes to remove excess starch. Drain the potatoes and pat them dry thoroughly, ensuring there is no remaining moisture. Heat vegetable oil in a frying pan over medium heat. Fry the potatoes in batches using the double-fry method until they are golden brown and crisp. Transfer the fries to a wire rack to drain any excess oil. While the fries are still hot, place them in a mixing bowl. Add a light drizzle of truffle oil, season with salt to taste, and toss with finely chopped parsley and freshly grated Parmesan cheese. Mix until the fries are evenly coated.  Steak: Pat the steak dry with paper towels. Drizzle lightly with olive oil and season generously on all sides with salt and black pepper. Let the steak rest at room temperature for about 20 minutes before cooking. Heat a pan or cast-iron skillet over medium-high heat and lightly coat it with olive oil. Once the pan is hot, place the steak fat-cap side down and render the fat for 1 minute. Lay the steak flat and sear for about 3-4 minutes on each side, ensuring full contact with the pan to develop a deep, even crust. For a medium steak, cook until the internal temperature reaches 140–145°F. Reduce the heat and add 2–3 tablespoons of unsalted butter, 2–3 sprigs each of fresh rosemary and thyme, and 3 garlic cloves. Tilt the pan slightly and continuously baste the steak with the melted butter and aromatics for 1 minute. Transfer the steak to a cutting board and allow it to rest for 10 minutes before slicing. Resting the steak allows the juices to redistribute, resulting in a tender and juicy medium-cooked steak.
