• 1½ lbs baby Yukon Gold potatoes • 3 tbsp melted butter • ½ cup finely grated Parmesan • 1 tsp garlic powder • 1 tsp smoked paprika (optional but worth it) • Salt and freshly cracked black pepper • Chopped parsley (optional) 1. Preheat your oven to 425°F. 2. Slice the potatoes into ½-inch thick coins. 3. Boil the potato slices in salted water for 8 minutes. Drain well and let them steam dry for 5 minutes. 4. Toss with the melted butter, garlic powder, paprika, salt, pepper, and half of the Parmesan. 5. Line a baking sheet with parchment. Sprinkle the remaining Parmesan directly onto the parchment, then arrange the potato coins in a single layer on top. 6. Bake for 20 minutes, then carefully flip each coin. 7. Bake another 15–20 minutes until deeply golden and crispy. 8. Finish with flaky sea salt, parsley, and an extra dusting of Parmesan while they’re hot.
