Welcome to my new series Dating Dishes Ep.1 - Carbonara!  Kat and I were actually long distance for the first year (!) we dated so whenever she visited me I wanted to impress her with a dish that was really special :) In this series I'll be featuring some simple, delicious dishes that I made for her, and that you can make at home for some self-love or for someone YOU love, starting with the first dish I ever made for her - Carbonara! You can find the full recipe for Carbonara on the blog - link in bio! All my key tips that I've featured here to make the best carbonara will be there as well! KEY TIPS FOR THE BEST CARBONARA:  1. Toast whole peppercorns over medium until fragrant to release those oils and unlock tons of flavor! Grind them in a pepper grinder or mortar and pestle to a coarse grind. The extra step is worth it, trust me! 2. Grate the fresh cheese as FINE as possible (we're talking almost like snow). The finer grating will cause more surface area which will allow the cheese to emulsify in the sauce easier, avoiding clumps or scrambling! 3. Always remove the rind from the guanciale! This rind is tough and unpleasant to eat even after cooked, so be sure to remove it! Once the fat is rendered out, add that to the egg mixture for some extra flavor! 4. Mix the carbonara in a bowl off the heat! There is more than enough heat in that pasta when taken directly from the pot into the egg, pepper, and cheese mixture to create a creamy, emulsified sauce. 5. Reserve some pasta water and let it cool slightly for a few minutes in case you want to loosen up the sauce. Do not put boiling pasta water into the eggs because they WILL scramble! It's important to let the starchy pasta water sit for a few minutes before incorporating it into the sauce.
