Do you like toffee/candy apples? 🍏  These make for delicious seasonal treats.  I used to dislike these when I was a child. There’s nothing worst than a tasteless powdery apple covered in sweet sickly candy, in my view!!  Transform your experience by making these at home. They’re not as difficult to make as you might think.  The secret to a really delicious toffee apple is your choice of apple! Go for crisp slightly tart Granny Smiths and you’ll end up with a juicy, zesty apple coated in a thin crisp sugar coating. I add a little dash of fruit cordial to enhance the candy flavour. Heaven!  Ingredients - 4 Granny Smith apples  4 lolly or cake pop sticks (or clean sticks from your garden)  200g caster sugar  1/2 tsp lemon juice  2 tbsp golden syrup  50ml water  Optional ingredients:  1 tbsp food colouring of your choice (I went for red) 2 tsps dark berry cordial (I used blackcurrant & blueberry)  Method: • Fill a large bowl with boiling water and put your apples in for 2 minutes to remove the waxy coating. This will help your candy stick to the apples. • Remove your apples from the water and dry them. Remove the stalks and push your sticks into the stalk ends. Put the apples on a lined baking tray and set aside.  • Next get a medium sized saucepan and put in your sugar, water and good colouring. Gently mix to combine.  • Set this mixture over a medium heat until the sugar dissolves - 5mins. (Do not stir the mixture once you put it on the heat so as to avoid sugar crystals forming around the sides of the pan- gently swirl instead.) Once the sugar has dissolved, add the golden syrup, lemon juice and cordial.  • Continue heating the mixture until it reaches 150C /302F (hard crack stage). Use a sugar thermometer if you have one otherwise test the consistency of the syrup by dolloping some from a spoon into a bowl of cold water. When the sugar instantly hardens in the water and is brittle and breaks easily, it’s at the correct stage. If it’s a bit squishy between your fingers then you need to keep heating!  • When your syrup is ready you need to work quickly and very carefully to coat your apples. Dip and twist them around until they’re all covered putting the apple side down on the lined baking tray to cool and harden. Wait until cooled before eating. These can be made up to 2 days in advance and kept in a cool dry place. I like to serve them on the same day to ensure that the apples are at their juiciest and most fresh!  TIPS - *If your syrup starts to thicken too much, put it back on the heat to loosen it before then carrying on with dipping your apples.  *I dollop test my syrup in water even when I’m using a sugar thermometer to be absolutely certain my syrup is at the correct stage.
