Add the beef and cook for 2 minutes per side, or until browned all around. Remove from the pot and set aside on a plate. You may have to do a few rounds of this. 4. Reduce heat to medium, add more ghee, and add the onions and carrots to the pot with a generous pinch of salt. Cook until onions are softened. Stir in the mushrooms and potatoes with another pinch of salt and cook for 2-3 min. Add garlic and cook 20 seconds. Adding salt at every step is important for building flavor. 5. Stir in the red wine to deglaze the bottom, then add the bone broth. 6. Return the meat to the pot; increase heat to high and bring to a boil. Add the fresh thyme and rosemary sprigs. Cover with a lid and place in the oven for about 3 to 3½, or until the roast is fall-apart tender. 7. Remove from the oven and let rest 5 to 10 minutes before serving.
