@nikittalouise1: It’s finally Friday & what a gorgeous week of weather we have had. Unfortunately it looks like things are going to go back a bit rubbish though & this creamy bacon & parmesan chicken is the perfect cosy meal for days like that. You can make it all with just one pot too so saves on the washing up! To make two portions you will need: For chicken - 2 chicken thighs deboned 2tsp smoked paprika 1tsp parsley 1tsp garlic powder Pinch salt & pepper For sauce - 1/2 red onion finely diced 4 rasher smoked bacon 2 garlic cloves minced 1tsp parsley 1 @knorruki white wine stock pot 150ml single cream 100ml water 40g grated parmesan Pat dry the chicken with kitchen roll then coat with salt & pepper and all of the other seasoning. Fry on in a pan with a drizzle of oil on a medium heat, skin side down first for around 5 mins until the skin is crispy. Turn over and cook for another 10 mins until fully cooked through. Remove the chicken from the pan and then add the onion & bacon browning off for 5 mins. Add the garlic, parsley, stock pot & water then bring to a simmer. Add the cream & parmesan, bring to a simmer and leave on the heat for 5 mins until it has started to thicken up. Add the chicken back to the pan and allow to warm through for 5 mins.
