Save this recipe!! Not only is this recipe packed with flavor and easy to make, it’s also super nutritious! Chickpeas offer plant-based protein and iron, cheese brings calcium and healthy fats, and spinach adds folate and vitamin A. I love serving this with pita bread and a fruit or veggie on the side 😉 CHEESY MEDITERRANEAN CHICKPEA SKILLET Ingredients: - 2 tablespoons olive oil - 1 small shallot, finely chopped - 1/3 cup frozen spinach, defrosted and chopped (or 1 cup fresh spinach) - 1 cup salt-free tomato sauce (or Marinara) - 1 teaspoon garlic powder - black pepper, to taste - 1/2 cup water (or vegetable broth) - 1 can (15 oz / 425 g) of chickpeas, drained and rinsed - 3 tablespoons black olives, sliced (optional, only for 12 months+) - 1/4 cup cream cheese (or creamy ricotta) - 4 oz (112 g) feta cheese (or other soft cheese like fresh mozzarella, brie, goat's cheese), prefer a low sodium option for under 12 months - 4-5 pita breads, cut into halves or quarters #### Directions: 1. Preheat oven to 350 °F (180°C) 2. Heat an oven safe cast iron skillet or dutch oven and add the olive oil. 3. Sautee the onion and add in the chopped spinach, cook for ~2 minutes. 4. Stir in the tomato sauce, water (or broth), chickpeas, garlic powder, black pepper and season to taste. 5. When it starts to simmer, mix in the cream cheese. 6. Cut the feta cheese (or other) into 1/2-inch slices and nestle into the sauce. 7. Place in the oven for ~15 minutes until the cheese has softened. 8. Remove from the oven and stir. 9. Serve with Pita bread pieces or rice. This recipe is suitable for babies 6 months+ as long as  the allergen dairy has been introduced and low sodium ingredients are used. **How to offer:** 6 months + with their palmar grasp: Gently mash the chickpeas with a fork so they are no longer round. Offer mashed on a spoon for baby to self feed or be responsively fed. 9 months + with pincer grasp: Gently mash the chickpeas with a fork so they are no longer round. Let them try to scoop it on a spoon or poke the chickpeas with a fork. Offer mashed on a spoon for baby to self feed or be responsively fed.
