A hearty and delicious classic roast chicken dinner infused with garlic herb butter, accompanied by crispy potatoes and fresh seasonal vegetables. Ingredients: - 1 whole chicken (about 4 lbs) - 4 tablespoons garlic herb butter (see instructions) - 1.5 lbs potatoes, cut into chunks - 2 cups seasonal vegetables (carrots, green beans, etc.) - Salt and pepper to taste - 1 tablespoon olive oil Instructions: 1. Preheat oven to 375°F (190°C). 2. Prepare garlic herb butter by mixing 4 tablespoons of softened butter with 3 minced garlic cloves, 1 tablespoon chopped fresh herbs (thyme, rosemary), salt, and pepper. 3. Rub the chicken all over with half of the garlic herb butter, season with salt and pepper. 4. Place the chicken in a roasting pan. Roast for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (74°C). 5. Meanwhile, toss potatoes with olive oil, salt, pepper, and some of the remaining garlic herb butter. 6. In the last 45 minutes of roasting, add potatoes around the chicken and roast until golden. 7. About 20 minutes before the chicken is done, toss the seasonal vegetables with olive oil, salt, and pepper, and add to the roasting pan to cook alongside the chicken. 8. Once cooked, let the chicken rest for 10 minutes before carving.
