This is so helpful. I’ve only made a brisket once and it came out a little dry. And this is probably the reason why. Especially since it was a smaller one

It’s true, my first brisket I cooked to 205 and it was dry, the second attempt I went based off of feel and prob tenderness and I nailed it.

A good friend of mine is brisket king I’m out kneck of the woods and he says exact same thing get the bark where you want it and probe tender.

I would imagine “probe tender” takes some practice to learn. I’ll try doing that at 195 and check it constantly till 199 and see how it goes. Thanks
