Limit one code per customer, minimum order of $100 before shipping is applied! - 10 oz Silver Fern Farms New Zealand Venison Medallions - Salt, ground with fresh thyme - 1/2 cup balsamic vinegar - 1/4 cup apple cider vinegar - 3/4 cup cane sugar - 6 oz fresh blackberries - Zest and juice of 1 lemon - 4 sprigs fresh thyme - 2-3 cloves (optional) - 2-3 handfuls arugula - 1/2 cup chopped walnuts - 1/3 cup dried cherries - 12 cherry tomatoes - 1/2 cup crumbled goat cheese - 1/4 cup balsamic vinegar - 6 tbsp olive oil - 1 tsp honey - 1 tsp fresh cracked pepper 1. Heat a skillet over medium heat. Unpackage and season venison medallions with salt and thyme. Let sit for 10-15 mins. 2. Add 1/2 cup balsamic vinegar, apple cider vinegar, and sugar to skillet and bring to a simmer. Then add blackberries, lemon zest, and lemon juice and bring back to a simmer. Add fresh thyme bundle. 3. Let sauce simmer for 3-5 minutes, once blackberries soften, smash them with a wooden spoon and continue to simmer for another 5-10 minutes until thickened. Remove thyme bundle and transfer to a bowl 4. Heat a cast iron skillet over medium high heat before adding oil. When oil is hot, add the venison and sear for 90 seconds a side. Remove when internal temp hits 120 F and rest 5. While the venison rests combine the arugula, walnuts,dried cherries, tomatoes, and goat cheese in a bowl.
