Recipe for Gammon, Egg and Chips with Pineapple Rings Ingredients (serves 2): 2x Gammon Steaks - @macburnhamfamilybutchers 700g Maris Piper 2 litre veg oil - for frying chips 1x Pineapple 4 tbsp honey 2 tsp chilli flakes 50g butter 2x Eggs English mustard - to serve Seasoning Olive oil Method: Peel and cut potatoes, then place them in a bowl of water to rinse off excess starch. Fill a large saucepan with cold tap water and add the chips. Heat the pan over medium heat and simmer until the chips are easily pierced with a knife, which should take about 20 minutes. Carefully remove the cooked chips from the water and let them dry on a cooling rack before refrigerating them. Heat a deep pan with oil to 130°C. Fry the chips in small batches until they develop a light crust, approximately 5 minutes. Remove from the oil, drain on a rack or paper towel, and set aside to cool. Prepare the pineapple by trimming the ends, peeling off the skin, and removing the ‘eyes.’ Slice the pineapple into 1-inch discs and remove the core either with an apple corer or a knife. In a pan, brown the pineapple slices in butter on both sides. Then, add honey and chilli flakes, and cook for an additional minute on each side. Season the gammon steaks and cook them in a large frying pan over medium heat for about 5 minutes on each side until slightly browned. If needed, cook for an additional minute on each side until cooked through. Reheat the oil in the pan to 180°C and fry the chips until golden brown, approximately 5-7 minutes. Drain and sprinkle with sea salt. If necessary, keep the chips warm in the oven at around 90°C while preparing the rest of the meal. Top the cooked gammon steaks with the prepared pineapple slices. In a separate small pan, fry the eggs to your desired liking. Serve chips first then the gammon topped with pineapple and the fried egg. Add a dollop of English mustard if you like it.
