This pita has all the classic flavors of chicken Caesar salad. One of my go dinners if I want Caesar salad to be a bit more filling.  Chicken Caesar Pita For the chicken: * 3 lbs boneless, skinless chicken thighs (about 6 pieces) * 2 tsp salt * 1 tsp black pepper * ½ tbsp garlic powder * 1 tsp onion powder * 1 tsp smoked paprika * Avocado oil spray For the Caesar salad & dressing: * 4–5 cups chopped romaine lettuce * 1 cup mayonnaise * 1½ tbsp Dijon mustard * 1 tbsp Worcestershire sauce * 1 tbsp red wine vinegar * 1–2 garlic cloves, finely grated or minced * ½ tsp freshly cracked black pepper * 2 tbsp olive oil * ½ cup freshly grated Parmesan cheese For assembling: * 4–5 pita breads * 2 Roma tomatoes, thinly sliced into half-moons * Crushed croutons * Extra freshly grated Parmesan Directions 1. Bake the chicken: Preheat oven to 425°F. Trim the chicken thighs and arrange on a parchment-lined baking sheet. Spray both sides with avocado oil and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Bake for 22–25 minutes, or until the chicken reaches 165°F internally. Broil for the last 2–3 minutes for extra color, then slice or dice. 2. Make the Caesar dressing: Whisk together the mayonnaise, Dijon, Worcestershire sauce, red wine vinegar, garlic, black pepper, olive oil, and Parmesan until creamy and combined. 3. Make the salad: Add the chopped romaine to a large bowl and toss with about ½ cup of the homemade Caesar dressing, adding more as desired. 4. Assemble: Warm the pita bread in a skillet or directly over the stove, then cut open. Fill each pita with Caesar salad, sliced tomatoes, and chicken.
