A quick, budget-friendly Mediterranean-inspired chicken stew loaded with anti-inflammatory turmeric, fiber-rich vegetables, and leafy greens, all in one pot. Ingredients: - 1 lb (450g) boneless, skinless chicken breast, diced - 1 cup canned chickpeas, rinsed and drained - 1 cup cherry tomatoes, halved - 2 cups leafy greens (spinach or kale) - 1 small onion, chopped - 3 cloves garlic, minced - 1 tsp turmeric powder - 1 tbsp olive oil - 1 cup low-sodium chicken or vegetable broth - 1 tsp dried Greek herbs (oregano, thyme, rosemary) - 1/2 cup chopped fiber-rich vegetables (carrots, bell peppers) - 1 dollop Greek yogurt (for serving) - Salt and pepper to taste (limit salt slightly to keep sodium below 600mg) Instructions: 1. Heat olive oil in a large pot over medium heat. 2. Add chopped onion and garlic; sauté until translucent, about 3 minutes. 3. Add diced chicken and cook until browned, about 5 minutes. 4. Stir in turmeric, Greek herbs, and fiber-rich vegetables; cook for 2 minutes. 5. Pour in broth, add chickpeas, cherry tomatoes, salt, and pepper. 6. Bring to a boil, then reduce heat to low; cover and simmer for 15 minutes, or until chicken is cooked through and flavors meld. 7. Uncover and add leafy greens; cook until wilted, about 2 minutes. 8. Serve hot, topped with a dollop of Greek yogurt. #Recipe #cooking #foodtiktok #homemade #EasyRecipes #DinnerIdeas #mealprep Save this for later!
