What about when you overly season like a chicken breast. I always find the seasonings burn and stick to my stainless. Unless it’s just salt/pepper/galric powder Its always a mess! Any recs ?

stick to what you know. Chemistry is not one of those things. Non stick are fine if not damaged or overheated. Chemicals is not a bogeyman.
