No matter what I do, these recipes always come out tasting a wrong. Like they're bitter, the dough is too stiff (I weigh my ingredients) and it's frustrating

Recently discovered that I had a nightshade allergy ( face gets super puffy/itchy ) and my bf found a recipe without using any tomatoes! It's just beetroot, carrot, onion and apple cider vinegar. Taste just like ketchup and we experimented with pizza and it worked just as well as any tomato paste!
