✨SALMON CRUNCH SALAD is my newest hyper fixation lunch and perfect for Ep. 6 of my LOADED LUNCHES series! Baked salmon is tossed in lots of crunchy cabbage, rice noodles and a delicious dressing that I seriously could not stop eating. This salad is perfect for meal prep because the flavors get better and better as the days go by—and no lettuce means it won’t get soggy! Be sure to tag me if you make this and FOLLOW my page for more easy recipes like this!⁣ ⁣ Comment LINK and I will DM you the link for my most used kitchen blender!⁣ ⁣ Makes 4 servings⁣ 1 lb salmon⁣ 1 tsp garlic powder⁣ 1 tsp kosher salt⁣ 1 tsp ground black pepper ⁣ ⁣ 2 cups shredded purple cabbage⁣ 2 cups shredded green cabbage⁣ 1 bunch green onions, sliced⁣ 2 carrots, shaved⁣ 6 oz vermicelli rice noodles (or noodles of choice)⁣ ⁣ 1/3 cup hoisin sauce⁣ 1/4 cup low sodium soy sauce⁣ 3 tb sesame oil⁣ 3 tb honey⁣ 1 tb fresh ginger, minced⁣ 2 cloves garlic⁣ 1/4 cup lime juice (1-2 limes, depending on taste)⁣ [2 tb sriracha — optional]⁣ ⁣ Garnish: cilantro, chopped and lime wedges⁣ ⁣ Preheat oven to 350F. Line a baking sheet with parchment paper. Place the salmon on top and season with garlic powder, salt and pepper. Bake for 14-15 minutes or until desired doneness. Remove from oven and shred using two forks, then set aside. Next, shred/chop all your veggies—cabbages, carrots and green onion—and transfer them to a large bowl. Cook noodles according to package instructions then add them to the bowl with the veggies. Add the shredded salmon to the bowl. Finally, make your dressing. Add all of your ingredients to a small blender and blend until smooth. Pour dressing on top, and toss to coat very well. Garnish with chopped cilantro and lime wedges and enjoy!!
