Find my cookbooks in my bio 👀💖 - ✰ 6 orange bell peppers ✰ 16 oz (454g) extra-lean ground beef - ½ cup (120g) enchilada sauce ✰ Garlic powder, onion powder, paprika, chili powder, salt & pepper, to taste ✰ 1½ cups (260g) beans, drained and rinsed ✰ 1½ cups (245g) corn ✰ 1½ cups (240g) cooked rice ✰ 1 cup (240g) salsa ✰ ½ small onion (about 50g), diced ✰ 1½ cups (about 170g) fat-free shredded cheese 1. Preheat oven to 350F. 2. Remove the tops and seeds from the bell peppers then carefully use a small knife to carve jack-o’-lantern faces into the sides of each pepper. 🎃 3. On a pan on high heat, mash and cook ground beef with seasonings. 4. Once beef is done, stir in enchilada sauce then combine with beans, corn, cooked rice, salsa, and onions. 5. Place the peppers upright in a baking dish and divide the filling evenly between them. 6. Sprinkle the shredded cheese over the top of the filling and keep the “tops” to the sides. 7. Bake for 25 minutes, or until the peppers are tender and the cheese is melted. 8.
