Have you heard freezing bread and bread products even homemade, and then thawing them out reduces the glycemic index value of the item you’re eating. Basically making it easier to digest him better

I’m making this recipe right now, they’ve been proving in the bowl with clingfilm for 3 hours and has barely risen and no air bubbles 🥹 am I best off moving it to the fridge over night? Was hoping to bake them this evening for sandwiches tomorrow!

I’m on my third batch. This one tastes the best but by the following day it seems dry inside! Am I over baking? My dough always seems stickier than yours! Do you put two trays in or one at a time?
