Add the bananas, dates, and cinnamon, and mix together until bananas are dates are evenly coated in the butter and cinnamon. Cook for 5-6 minutes until bananas get golden and caramelized and dates get soft and caramelized. Make sure to stir or flip frequently (especially the dates), to prevent burning. Add your ice cream to a bowl and top with the banana and dates. Finish off with a drizzle of olive oil and a pinch or two of flaky salt.
