Prepare the Scrambled Eggs: Crack the eggs into a bowl, add the cream and salt. Whisk vigorously to combine. Optionally, pass the mixture through a strainer for extra smoothness. 2. Cook the Eggs: Preheat a nonstick pan over medium heat for a few minutes. Add the butter, then pour in the egg mixture. Cook the eggs, making long sweeps with a spatula to form larger curds. Move the cooked egg around the pan to allow the uncooked egg to flow into the hot areas. 3. Finish the Eggs: Remove the pan from the heat when the eggs are about 85% cooked. Let the eggs sit off the heat for about a minute to finish cooking with residual heat. Stir occasionally to ensure they are creamy but not runny. 4. Prepare the Pesto Avocado Toast: Mash the avocado and pesto together. Season with lemon juice and salt to taste. Spread the mixture on the toasted sourdough. 5. Serve scrambled eggs alongside the pesto avocado toast. Tips * Remember, taking the eggs off the heat a little before they reach the desired doneness allows them to finish cooking off the heat. You can always return the pan to the heat for a few more seconds if needed. The eggs should be creamy, moist, and not runny.
