Airtight jar + water = problem
Sealing the berries in a jar filled with water creates an anaerobic (low-oxygen) environment. The berries may still look firm on the outside, but their natural respiration is inhibited. This can lead them to produce anaerobic metabolic byproducts, which negatively affect flavor and quality — and in the worst case, it can even pose health risks, because bacteria like Clostridium can become active when oxygen is absent.
