I use 2 cups blended cottage cheese, 2 cups flour, 1 t baking powder. Form into bagel shape. Then dip each one in boiling water for 15 seconds. Top with seasoning, bake and they come out perfect.

bagels are usually dropped in boiling water for 1-2 minutes then baked. This helps to give the chewy outside. Curious if it would work with this dough.

You need to let them cool right down - like 45 minutes - before cutting them. That’s why it’s ‘mush’ inside - you cut too soon
