You cannot cook every single kind of meat medium rare. Intestines and organs are best eaten in a goulash type stew, cooked for many hours.

Beef heart is boiled first with onions, cloves and bay leaves until tender. You strain the liquid dice the heart either small or large chunks and sauté it with olive oil and seasonings and lemon juice

I prepare it like liver, soak it in milk overnight to remove the taste of the iron then slice it thin and fry it, makes great steak/heart sandwiches
