@mumsfoodies: 50/50 Ciabatta Rolls Dough: 420ml lukewarm water 7g instant yeast 40ml Olive Oil 250g wholemeal bread flour 250g white bread flour 1/2 tbs salt Whisk the water and the yeast together, add the oil and whisk again. Add both flours and salt and mix really well till everything is combined. Scrape the sides of the bowl with a dough scraper or spatulas and push the dough up into a ball. Cover a rest 30 min, After 30 min do 4 x stretch and folds, with a wet hand and turning the bowl after each one. Cover and rest 30 min. After 30 min repeat with 4 stretch and folds. Cover and rest 1 hour. Preheat your oven to 240C and add a small tray at the bottom with cold water to heat with the oven. Grease a large oven baking dish and add parchment (so it doesn’t move around. Sprinkle the dough with flour and generously on your baking dish. Turn the dough out onto the dish, sprinkle the top of the dough with flour and cut into two pieces, gently shape into a rectangle and cut into 3, do the same on the other side so you have 6 rolls, using your scraper or metal spatula you can gently tidy the shape up and tuck the sides in but you can also leave them as they are they’ll still be amazing. Cover and rest for 20 min. Bake for 10 min at 240C with the water inside, turn down the oven to 220C and take the water out. Bake for another 10 min. Enjoy D 🫶 #fyp #bread #ciabatta #wholemeal
