Authentic Chicken Biryani چکن بریانی Ingredients * ½ chicken * 1 cup oil * 2 sliced onions (fried) * ½ cup yogurt * ½ tbsp chilli flakes * ½ tbsp cumin * 1 tbsp black pepper powder * 2 tbsp biryani masala * 1 tbsp salt * 1 tbsp ginger-garlic paste * Handful of chopped coriander * Juice of ½ lime * 2 thinly sliced tomatoes * 2–3 potatoes, cubed * 1 glass soaked rice * 2 star anise * 4–6 cloves * 2 cinnamon sticks * 1 tbsp cumin * 1 tbsp salt Method 1. Heat the oil and fry the sliced onions until golden. Remove and set aside. 2. In a bowl, combine the chicken, yogurt,and all the spices . Mix well and marinate for 1 hour. 3. In the same oil, cook the cubed potatoes on low heat for 10 minutes, then lightly fry them. Remove and set aside. 4. Add the marinated chicken to the same oil and cook until the moisture evaporates and the masala thickens. Add the potatoes, cover, and cook on low heat for 6–7 minutes. 5. In a pot of boiling water, add the star anise, cloves, cinnamon sticks, cumin, and salt. Add the soaked rice and cook until about 90% done. Drain the rice. 6. Spread the cooked rice over the chicken and potatoes. Top with food colouring, chopped coriander, and fried onions. 7. Cover tightly and cook on dum (low heat) for 10 minutes. 8.
