Whisk in flour and cook for 1 minute. Slowly whisk in milk and beer until smooth. Cook for 2–3 minutes until slightly thickened. Reduce heat to low or remove from heat. Gradually stir in cheddar until melted and creamy. Add Dijon, garlic powder, paprika and salt to taste. Tip: Don’t boil after adding the cheese or it can become grainy.
