Breakfast burrito asmr 🙂‍↕️ I like to mix it up and use different fillings in these, but for this batch I was #gifted some products from @V&V Supremo Foods, Inc. and used their Chicken Chorizo mixed with potatoes, scrambled eggs with green chilies, and finishing it off with V&V Supremo Chihuahua® Brand Quesadilla Cheese which is sooo good and melts perfectly every time. Recipe below! For 6 burritos: 6 flour tortillas 12 eggs 1 small can diced green chilis 3-4 Yukon gold potatoes, peeled and cubed 1 large yellow onion, chopped 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp smoked paprika 1/2 tsp oregano Kosher salt Black pepper 2 links of V&V Supremo Chicken Chorizo 2 cups V&V Supremo Chihuahua® Brand Quesadilla Cheese Heat pan over medium heat and add enough olive oil to coat the bottom of the pan. Add potatoes and season with salt, pepper, oregano, onion powder, garlic powder, and smoked paprika. Stir to coat evenly. Cook potatoes over medium heat stirring occasionally until potatoes start to soften and brown slightly, about 10 minutes. Add onion and season with more salt. Cook until onions are softened and translucent and potatoes are browned and tender. At this step you can either remove the potatoes and onion and cook the chorizo on its own or if your pan is big enough, just push them to the side and add chorizo. Cook for about 8 minutes until chorizo is cooked through and then stir to combine with potatoes and onion. Cook for an additional 2-3 minutes and remove from heat. Beat 12 eggs, season with salt, pepper, and a little hot sauce. Heat large pan over medium low heat and add eggs and diced chilis and scramble. Towards the end, and a half cup of cheese. To each burrito add about 1/2 cup scrambled eggs, 1/3 cup potato and chorizo mix, and 1/4 cup cheese. Roll and lightly toast in a preheated pan with a little olive oil. To freeze, I let them cool, wrap them in parchment paper and place them in a freezer bag. To reheat, I take them out of the parchment paper, wrap them in a paper towel and microwave for about 90 seconds on each side! #mealprepideas #mealprep #freezermeals #fyp
