Creamy Paprika Chicken & Chorizo over Garlic Mash 😍 This is such a comforting dinner to come home to after a long day. Smoky paprika chicken in a creamy tomato sauce, spooned over garlic mash and finished with crispy bites of chorizo. It also keeps nicely in the fridge for a few days if you want to meal prep it!  If you fancy more easy feel good dinners like this my latest cookbook is linked in my bio 💕 Ingredients (serves 2):  Garlic mash: 500g potatoes, peeled and chopped 1 tsp chopped garlic  100ml semi-skimmed milk, warmed  20g light butter spread Salt  Black pepper 
 Paprika chicken & chorizo: 40g chorizo, diced  200g chicken breast, diced
1 small onion, finely diced
1 tsp chopped garlic 
2 tsp sweet smoked paprika
½ tsp extra paprika (optional, for colour)
200ml passata 100ml chicken stock
80ml Elmea single cream alternative (can use normal single cream)
2-3 sprigs of fresh parsley chopped 
 💕Bring the potatoes to boil in well salted water until tender. Drain, then mash with the milk, butter, salt and pepper until smooth and fluffy. Stir through the garlic. Cover and keep warm. 💕Fry off the chorizo until it releases its oils and starts to crisp. Remove from the pan, keeping warm. Leave behind the oils.  💕Add the diced chicken to the pan and season with salt and pepper. Fry until mostly cooked through, then add the onion and continue to fry until softened. 
 💕Stir in the garlic and paprika and cook for 30 seconds until fragrant. 💕Pour in the passata and chicken stock, stir well and simmer until slightly reduced. Lower the heat and stir in the cream, then gently simmer for a further couple of mins.  💕Spoon the creamy paprika chicken over the garlic mash and finish with fresh parsley the crispy chorizo pieces.
