Easy Crispy Chicken Japanese Curry 🍛👩🏻‍🍳Ingredients: 2 chicken breasts, sliced in half and pounded (Salt, pepper, garlic powder) Marinade: 1 cup milk 1 egg 1/8 cup distilled white vinegar 1/4 cup flour 1 tbsp garlic powder 1/2 tbsp salt 1/2 tbsp black pepper For frying: 1 1/2 cups panko 2 cups oil Curry: 2 tbsp olive oil 1 onion, diced 3 cloves garlic, minced 2 carrots, diced 2 potatoes, diced 3 cups water Japanese curry cubes (medium heat) To serve: Rice Green onions Instructions: -Season the chicken with salt, pepper, and garlic powder. In a bowl, mix together all the marinade ingredients and add the chicken. You can let it marinate for 20–30 minutes for more flavor, or go straight into frying if you’re short on time. -Heat oil in a pan. Remove the chicken from the marinade, coat in panko, and fry until golden and crispy on both sides. Set aside. -In a separate pot, heat olive oil and sauté the onion until soft. Add garlic, carrots, and potatoes, and cook for a few minutes. Pour in the water and let simmer until the vegetables are tender. Add the curry cubes and stir until fully dissolved and thickened. -Serve over rice, slice the crispy chicken, and lay it right over the curry.
