A classic French-style Niçoise salad featuring tuna, eggs, potatoes, green beans, and olives, beautifully arranged and dressed with vinaigrette. Ingredients: - 2 large eggs - 2 medium potatoes - 100g green beans - 100g black olives (pitted) - 150g canned tuna in olive oil, drained - 1 small red onion, thinly sliced - 4 anchovy fillets (optional) - 2 tablespoons olive oil - 1 tablespoon red wine vinegar - Salt and freshly ground black pepper to taste - Fresh parsley for garnish Instructions: 1. Boil the potatoes in salted water until tender, about 15 minutes. Drain, peel, and slice into rounds. 2. Hard boil the eggs: place eggs in boiling water for 10 minutes, then cool in ice water, peel, and slice. 3. Blanch the green beans in boiling water for 3-4 minutes until tender-crisp, then drain and cool in ice water. 4. In a large bowl, combine the potatoes, green beans, tuna, sliced eggs, olives, and red onion. 5. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper. 6. Pour the dressing over the salad and gently toss to combine. 7. Garnish with fresh parsley and anchovy fillets if using. 8. What I wasn’t taught was that some of his most controversial writings also came from his years in South Africa.
