I’m new to sourdough but when I put my dough to ferment in the fridge it didn’t grow at all is that normal? Also I was making sandwich bread sourdough so a couple more ingredients

You can use less starter and it will take longer to ferment, I only use 50g per loaf!

It works. It all works. I think I love mixing my dough at 8am. Stretch and folds for two hours (4-6). Bulk ferment on the counter 4 hours. Shape. Let rise. In the evening I bake. If I get tired, I overnight cold ferment. If I start late in the day I leave it overnight and shape in the morning and bake.

In the winter I’ll time my prep to be done with stretch and folds right before bed and just leave it on the counter. It’s cold so total BF is about 13 hours for me. By the morning they are ready to shape 😁

Same thing happened to me but after taking it out the fridge I decided to shape and then let it sit for about an hour before baking. They rose beautifully still
