The Softest no knead Bomboloni Ever Ingredients * 300 g flour (2½ cups) * 43 g sugar (3½ tbsp) * 45 g melted butter (3 tbsp) * 1 tsp salt * 1 egg * 160 g warm whole milk (⅔ cup) * 1 tsp instant yeast Chocolate Custard Filling * 1 egg * 250 ml milk (1 cup) * 50 g sugar (¼ cup) * 30 g cornstarch (3 tbsp) * 2 tbsp Nutella or any chocolate cream ⸻ Instructions 1. In a bowl, mix warm milk, sugar, yeast, and egg. 2. Add flour, salt, and melted butter all at once and mix until a dough forms, then coil fold multiple times until smooth. 3. Cover and let rise for 2 hours or until doubled. 4. While the dough is resting, in a pot mix milk, egg, sugar, and cornstarch, cook on low heat while stirring until thick, remove from heat, add chocolate, mix, cover, let cool, then mix again and transfer to a piping bag. 5. Divide dough into 7 pieces (about 75 g each), shape into balls by turning them on the work surface with your hand, place on parchment paper and press gently. 6. Cover and let rest 20–30 minutes until they puff a little bit. 7. Fry about 2 minutes per side until golden, then let cool and fill with custard. 8.
